Shrimp With Oregano and Rosemary

C. Davis (serves 4)

  • 20 large shrimp, peeled and deveined

  • 1 Tbs olive oil

  • 2 Tbs lemon, lime, or orange juice

  • 3 cloves garlic, chopped finely

  • 2 Tbs chopped fresh rosemary

  • 2 Tbs chopped fresh oregano

  • 2 Tbs chopped fresh parsley (either flat leaf of curly leaf)

  • 1 tsp salt

  • freshly cracked pepper

In medium bowl, combine all ingredients, and mix well to coat the shrimp evenly. Cover bowl, and allow to marinate in the refrigerator for an hour. Preheat broiler or grill, or grill-pan over high heat. Remove shrimp from marinade, and grill or broil 2 minutes on each side, until cooked through.
